Description

A creamy and flavorful side dish featuring layers of sweet potatoes, onion, and a rich cheese sauce, baked to perfection.


Ingredients

  • 2 pounds sweet potatoes, peeled and thinly sliced
  • 1 medium onion, finely chopped
  • 2 cups heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 3-quart baking dish with butter.
  3. Melt the butter in a large saucepan over medium heat and add the chopped onion; cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for another minute.
  5. Sprinkle flour over the onion mixture, stirring for about 2 minutes to form a roux.
  6. Gradually whisk in the heavy cream, cooking until thickened for about 3-5 minutes.
  7. Stir in thyme, salt, and black pepper, then mix in the cheddar cheese until melted.
  8. Layer half of the sweet potatoes in the baking dish and pour half of the cheese sauce over it. Repeat with remaining ingredients.
  9. Sprinkle grated Parmesan cheese on top.
  10. Cover with aluminum foil and bake for 30 minutes.
  11. Remove foil and bake for an additional 20-25 minutes until potatoes are tender and top is golden.
  12. Let cool slightly before serving and garnish with fresh parsley.

Notes

For best results, slice sweet potatoes evenly using a mandoline. Adjust cheese for different flavors.
