A creamy and flavorful side dish featuring layers of sweet potatoes, onion, and a rich cheese sauce, baked to perfection.

- 2 pounds sweet potatoes, peeled and thinly sliced
- 1 medium onion, finely chopped
- 2 cups heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 3-quart baking dish with butter.
- Melt the butter in a large saucepan over medium heat and add the chopped onion; cook until softened, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Sprinkle flour over the onion mixture, stirring for about 2 minutes to form a roux.
- Gradually whisk in the heavy cream, cooking until thickened for about 3-5 minutes.
- Stir in thyme, salt, and black pepper, then mix in the cheddar cheese until melted.
- Layer half of the sweet potatoes in the baking dish and pour half of the cheese sauce over it. Repeat with remaining ingredients.
- Sprinkle grated Parmesan cheese on top.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 20-25 minutes until potatoes are tender and top is golden.
- Let cool slightly before serving and garnish with fresh parsley.
Notes
For best results, slice sweet potatoes evenly using a mandoline. Adjust cheese for different flavors.
