Description

A delightful bake featuring creamy sweet potatoes, earthy sage, and a crispy Parmesan breadcrumb topping, perfect for weeknights or special occasions.


Ingredients

  • 2 lbs sweet potatoes
  • 2 tablespoons butter
  • 1/2 cup milk or cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh sage, chopped
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and chop the sweet potatoes and cook them in a pot of boiling water until tender, about 15 minutes.
  3. Drain the sweet potatoes and return them to the pot.
  4. Add butter, milk or cream, sage, salt, and pepper. Mash until creamy and smooth.
  5. Transfer the mixture to a baking dish and spread evenly.
  6. In a small bowl, mix breadcrumbs and Parmesan cheese. Sprinkle this mixture over the sweet potato mash.
  7. Bake for 25-30 minutes or until the top is golden and crispy.
  8. Serve warm as a side dish.
