A tender and flavorful chicken dish cooked in a slow cooker, combining the sweetness of honey, the saltiness of soy sauce, and a blend of spices.

- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 1 large onion (sliced)
- 4 cloves garlic (minced)
- 1 cup chicken broth (low-sodium preferred)
- 1/3 cup soy sauce
- 1/4 cup honey
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh parsley (chopped, for garnish)
Instructions
- Pat the chicken breasts dry with paper towels.
- Season both sides of the chicken with salt, black pepper, and smoked paprika.
- In a skillet, heat olive oil over medium-high heat and sear each chicken breast for 3 minutes on each side until golden brown.
- In the bottom of the crockpot, layer the sliced onions and minced garlic.
- Place the seared chicken on top of the onion mixture.
- In a bowl, mix chicken broth, soy sauce, honey, Dijon mustard, and dried thyme; whisk until combined.
- Pour this mixture over the chicken in the crockpot.
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
- Remove the chicken and cover with foil to keep warm.
- To thicken the sauce, mix cornstarch with water to create a slurry and stir it into the liquid in the crockpot; cook on high for another 10-15 minutes.
- Serve the chicken with the thickened sauce and garnish with parsley.
