Description

A tender and flavorful chicken dish cooked in a slow cooker, combining the sweetness of honey, the saltiness of soy sauce, and a blend of spices.


Ingredients

  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 1 large onion (sliced)
  • 4 cloves garlic (minced)
  • 1 cup chicken broth (low-sodium preferred)
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides of the chicken with salt, black pepper, and smoked paprika.
  3. In a skillet, heat olive oil over medium-high heat and sear each chicken breast for 3 minutes on each side until golden brown.
  4. In the bottom of the crockpot, layer the sliced onions and minced garlic.
  5. Place the seared chicken on top of the onion mixture.
  6. In a bowl, mix chicken broth, soy sauce, honey, Dijon mustard, and dried thyme; whisk until combined.
  7. Pour this mixture over the chicken in the crockpot.
  8. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  9. Remove the chicken and cover with foil to keep warm.
  10. To thicken the sauce, mix cornstarch with water to create a slurry and stir it into the liquid in the crockpot; cook on high for another 10-15 minutes.
  11. Serve the chicken with the thickened sauce and garnish with parsley.
