Ingredients

- 1 cup lentils (green or brown)
- 2 cups vegetable broth or water
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups fresh spinach
- 2 eggs
- 1 avocado, sliced
- Olive oil for sautéing
Instructions
- Rinse the lentils under cold water and drain. In a pot, combine the lentils and vegetable broth or water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
- In a skillet, heat olive oil over medium heat. Sauté the diced onion until translucent, then add minced garlic, cumin, smoked paprika, salt, and pepper. Cook for another minute.
- Add cooked lentils to the skillet with the onion mixture. Stir in fresh spinach and cook until wilted.
- Fry the eggs to your liking in another pan.
- Divide lentil mixture among bowls, top each with a fried egg and slices of avocado. Serve warm and enjoy!
