Description

A nutritious and filling breakfast bowl packed with protein and fiber, perfect for starting your day.


Ingredients

  • 1 cup lentils (green or brown)
  • 2 cups vegetable broth or water
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 2 eggs
  • 1 avocado, sliced
  • Olive oil for sautéing

Instructions

  1. Rinse the lentils under cold water and drain. In a pot, combine the lentils and vegetable broth or water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté the diced onion until translucent, then add minced garlic, cumin, smoked paprika, salt, and pepper. Cook for another minute.
  3. Add cooked lentils to the skillet with the onion mixture. Stir in fresh spinach and cook until wilted.
  4. Fry the eggs to your liking in another pan.
  5. Divide lentil mixture among bowls, top each with a fried egg and slices of avocado. Serve warm and enjoy!
