Description

A hearty and flavorful Cajun dish featuring ground beef, pork sausage, vegetables, and rice seasoned to perfection.


Ingredients

  • 1 lb ground beef
  • 1 lb pork sausage
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 Tbsp Cajun/Creole Seasoning
  • 2 cups uncooked regular long-grain rice
  • 4 cups chicken broth
  • 1 (10-oz) can diced tomatoes with green chiles, undrained

Instructions

  1. Heat a large skillet or Dutch oven over medium heat. Add ground beef and pork sausage, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
  2. Add chopped onion, green bell pepper, and celery to the skillet. Sauté for about 5 minutes, until vegetables are tender.
  3. Stir in Cajun seasoning, coating the meat and vegetables well. Cook for another 2 minutes.
  4. Add uncooked rice to the skillet, stirring it into the mixture. Toast the rice for about 2 minutes.
  5. Pour in chicken broth and diced tomatoes, stirring to combine. Bring to a gentle boil.
  6. Once boiling, reduce heat to low, cover, and let simmer for 20-25 minutes, until rice is tender and liquid is absorbed.
  7. Remove from heat and let sit, covered, for an additional 5 minutes. Fluff rice with a fork before serving.

Notes

To prevent mushy rice, measure broth accurately. Ground beef and sausage should be well-browned for depth of flavor.
