Description

Ingredients

  • 1 lb Italian sausage or smoked sausage
  • 1 cup long-grain white rice
  • 1 cup bell peppers (diced, mixed colors)
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 2 tsp paprika
  • 1 tsp black pepper
  • Salt to taste

Instructions

  1. Preheat a large skillet over medium heat.
  2. Add the sausage and cook until browned and crispy, about 5-7 minutes.
  3. Stir in the diced bell peppers, onion, and minced garlic; sauté until the vegetables soften and the onions are translucent.
  4. Add the rice to the skillet, along with paprika and black pepper; stir well to coat.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until the rice absorbs the broth.
  6. Fluff the rice with a fork before serving. Garnish with fresh herbs if desired.

Notes

For added flavor, experiment with spices or substitute different types of sausage. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2 months.
