- 1 pound sausage (Italian or kielbasa)
- 4 medium potatoes, diced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: garlic powder, paprika, or herbs for seasoning
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced potatoes to the skillet and cook until golden brown and tender, about 10-15 minutes, stirring occasionally.
- Add the chopped onion and bell pepper, cooking until softened and fragrant, about 5-7 minutes.
- Slice the sausage into rounds and add it to the skillet, cooking until heated through, about 5-7 minutes.
- Season with salt, pepper, and any optional seasonings. Serve hot and enjoy!
Notes
Storing leftovers in a sealed container in the fridge keeps them good for about 3-4 days. Can be frozen for 2-3 months.
