Description

A quick and easy one-pan meal featuring hearty sausage and tender potatoes, perfect for any time of day.


Ingredients

  • 1 pound smoked sausage, sliced into 1/2-inch pieces
  • 1 1/2 pounds baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced (any color)
  • 1 cup fresh spinach (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Parboil the potatoes in salted boiling water for 8-10 minutes until fork-tender, then drain.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sausage slices and cook until browned, about 4-5 minutes. Remove and set aside.
  3. Add the remaining tablespoon of olive oil to the skillet. Sauté diced onion and garlic for about 2 minutes until fragrant. Then add sliced bell pepper and cook for another 3-4 minutes until softened.
  4. Stir in the parboiled potatoes along with smoked paprika, Italian seasoning, salt, and black pepper. Cook for 5-7 minutes to crisp the potatoes.
  5. Return the browned sausage to the skillet and toss everything together. If using spinach, add it during the last 2 minutes of cooking to wilt.
  6. Garnish with fresh parsley and serve hot.
