- Salt and pepper to taste
- 1 tsp dried thyme (optional)
Instructions
- Prep all ingredients: Start by washing and chopping your veggies. Dice potatoes into bite-sized pieces to ensure they cook evenly.
- Cook the sausage: Heat olive oil in a large skillet over medium heat. Once hot, add sausage rounds. Cook until they are browned on all sides, about 5-7 minutes.
- Add onions and garlic: Stir in the sliced onions and minced garlic. Cook until the onions become translucent, about 3-4 minutes.
- Mix in potatoes and bell peppers: Add the diced potatoes and chopped bell peppers to the skillet. Season with salt, pepper, and dried thyme (if using). Cover and steam until the potatoes are fork-tender, about 10-12 minutes.
- Crisp everything up: Uncover and cook for an additional 5 minutes to allow some potatoes and sausage to get crispy.
