- 1/4 cup ice water
- 1 cup honey
- 1/4 cup whiskey
- 3 large eggs
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- Flaky sea salt for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Mix flour, salt, and butter until it resembles coarse crumbs.
- Mix in ice water until the dough comes together.
- Roll out the dough and fit it into a pie pan.
- Bake the crust for 15 minutes until lightly golden.
- Whisk together honey, whiskey, eggs, lemon juice, and salt in another bowl.
- Pour the filling into the baked pie crust.
- Bake for 25-30 minutes or until set.
- Let cool and top with whipped cream and flaky sea salt before serving.
Notes
Use chilled ingredients and avoid overmixing the dough for the best results.
