A warm, crusty loaf of homemade rustic French bread that’s perfect for any occasion.
Ingredients
Scale
- 410 grams all-purpose flour
- 1 teaspoon granulated sugar
- 1 teaspoon fine salt
- 1.5 teaspoons active dry yeast
- 300 milliliters warm water (38 – 46 °C)
Instructions
- In a mixing bowl, combine the active dry yeast, warm water, and sugar. Allow to rest for about 5 minutes until foamy.
- Add half of the flour and the fine salt to the yeast mixture.
- Using a mixer with a dough hook, knead the mixture on medium-low speed, gradually adding the remaining flour until sticky.
- Transfer the dough to a lightly floured bowl and cover with a towel. Let it rise for about 120 minutes or until doubled in size.
- Shape the dough into a smooth ball and let it rise for another 30 minutes while covered with a large inverted bowl.
- Preheat oven to 220 °C with a Dutch oven inside for 20 minutes.
- Score the top of the dough with a sharp knife.
- Carefully place the dough on parchment in the hot Dutch oven and bake covered for 30 minutes, then uncovered for an additional 10 minutes.
- Remove the bread from the oven and transfer it to a wire rack to cool completely before slicing.
Notes
Store in an airtight container at room temperature for 3–5 days. To keep fresh, avoid refrigerating. Slices can be frozen and reheated.
