Description

A warm, crusty loaf of homemade rustic French bread that’s perfect for any occasion.


Ingredients

Scale
  • 410 grams all-purpose flour
  • 1 teaspoon granulated sugar
  • 1 teaspoon fine salt
  • 1.5 teaspoons active dry yeast
  • 300 milliliters warm water (38 – 46 °C)

Instructions

  1. In a mixing bowl, combine the active dry yeast, warm water, and sugar. Allow to rest for about 5 minutes until foamy.
  2. Add half of the flour and the fine salt to the yeast mixture.
  3. Using a mixer with a dough hook, knead the mixture on medium-low speed, gradually adding the remaining flour until sticky.
  4. Transfer the dough to a lightly floured bowl and cover with a towel. Let it rise for about 120 minutes or until doubled in size.
  5. Shape the dough into a smooth ball and let it rise for another 30 minutes while covered with a large inverted bowl.
  6. Preheat oven to 220 °C with a Dutch oven inside for 20 minutes.
  7. Score the top of the dough with a sharp knife.
  8. Carefully place the dough on parchment in the hot Dutch oven and bake covered for 30 minutes, then uncovered for an additional 10 minutes.
  9. Remove the bread from the oven and transfer it to a wire rack to cool completely before slicing.

Notes

Store in an airtight container at room temperature for 3–5 days. To keep fresh, avoid refrigerating. Slices can be frozen and reheated.
