- 1 pound (450 g) ground pork sausage (mild or spicy)
- 1 (10 oz / 283 g) can Rotel tomatoes with green chilies, well drained
- 8 oz (225 g) cream cheese, softened
- 2 cups (200 g) shredded cheddar cheese (sharp or mild)
- 1½ cups (180 g) Bisquick baking mix
- ½ teaspoon garlic powder (optional)
- ½ teaspoon onion powder (optional)
- Pinch of black pepper
Instructions
- Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the ground pork sausage and softened cream cheese, mixing until smooth.
- Stir in the well-drained Rotel tomatoes and shredded cheddar cheese until evenly combined.
- Gradually add the Bisquick baking mix, along with garlic powder, onion powder, and black pepper. Mix until you have a thick, well-blended dough.
- Using a tablespoon or cookie scoop, roll the mixture into 1-inch balls and place them on the prepared baking sheet, spaced 1 inch apart.
- Bake for about 22–25 minutes, or until golden brown and cooked through.
- Let the sausage balls cool slightly before serving. Serve warm as an appetizer or snack.
Notes
Make sure to drain the Rotel well to prevent sogginess. For a spicier version, use hot sausage or add jalapeños.
