- 2 lbs sweet potatoes
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Wash and scrub the sweet potatoes (no peeling needed). Cut into 1-inch cubes.
- Toss the cubes with olive oil, maple syrup, smoked paprika, garlic powder, salt, and black pepper in a bowl.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Spread potatoes in a single layer.
- Roast for 25-30 minutes, flipping halfway, until golden and tender.
- Transfer to a serving bowl and sprinkle with chopped parsley. Serve warm.
Notes
For best results, cut sweet potatoes evenly and don’t overcrowd the pan to ensure roasting rather than steaming.
