Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Wash and scrub the sweet potatoes (no peeling needed). Cut into 1-inch cubes.
  2. Toss the cubes with olive oil, maple syrup, smoked paprika, garlic powder, salt, and black pepper in a bowl.
  3. Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Spread potatoes in a single layer.
  4. Roast for 25-30 minutes, flipping halfway, until golden and tender.
  5. Transfer to a serving bowl and sprinkle with chopped parsley. Serve warm.
