Description

A vibrant and flavorful salad made with roasted sweet potatoes, black beans, and fresh vegetables, perfect for any occasion.


Ingredients

  • 2 large sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 1 avocado, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into 1-inch cubes.
  3. Toss the sweet potatoes with olive oil, salt, and pepper, and spread them out on a baking sheet.
  4. Roast for 25-30 minutes, or until they are caramelized and tender.
  5. In a large bowl, combine the roasted sweet potatoes, black beans, red bell pepper, corn, avocado, red onion, and cilantro.
  6. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
