Description

A delightful lasagna made with layers of roasted red peppers, fresh spinach, creamy ricotta, and mozzarella, perfect for family dinners or gatherings.


Ingredients

  • Lasagna noodles
  • Ricotta cheese
  • Roasted red peppers
  • Fresh spinach
  • mozzarella cheese
  • Parmesan cheese
  • Marinara sauce
  • Olive oil
  • Garlic
  • Salt
  • Pepper
  • Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant.
  3. Add spinach and cook until wilted.
  4. In a bowl, mix ricotta cheese with salt, pepper, and Italian seasoning.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer cooked lasagna noodles, ricotta mixture, roasted red peppers, sautéed spinach, and mozzarella cheese. Repeat layers, finishing with noodles and sauce on top.
  7. Sprinkle Parmesan and additional mozzarella on top.
  8. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes or until cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

Cook noodles until al dente to avoid mushiness. Do not overload with sauce to prevent soupy lasagna.
