A delightful lasagna made with layers of roasted red peppers, fresh spinach, creamy ricotta, and mozzarella, perfect for family dinners or gatherings.
Ingredients
- Lasagna noodles
- Ricotta cheese
- Roasted red peppers
- Fresh spinach
- mozzarella cheese
- Parmesan cheese
- Marinara sauce
- Olive oil
- Garlic
- Salt
- Pepper
- Italian seasoning
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant.
- Add spinach and cook until wilted.
- In a bowl, mix ricotta cheese with salt, pepper, and Italian seasoning.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer cooked lasagna noodles, ricotta mixture, roasted red peppers, sautéed spinach, and mozzarella cheese. Repeat layers, finishing with noodles and sauce on top.
- Sprinkle Parmesan and additional mozzarella on top.
- Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes or until cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
Cook noodles until al dente to avoid mushiness. Do not overload with sauce to prevent soupy lasagna.
