Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the carrots: In a large bowl, toss the carrot sticks with olive oil, salt, and pepper until they are evenly coated.
- Roast the carrots: Spread the carrots out in a single layer on a baking sheet. Roast them in the preheated oven for about 25-30 minutes or until they are tender and starting to brown, stirring halfway through.
- Make the whipped ricotta: While the carrots are roasting, combine the ricotta cheese, lemon juice, and lemon zest in a medium bowl. Use a fork or a hand mixer to whip the cheese until it is smooth and creamy.
- Serve: Once the carrots are done roasting, arrange them on a serving platter. Spoon the whipped ricotta on top, garnish with fresh herbs, and, if desired, drizzle honey or balsamic glaze over everything.
