Ingredients
- Carrots
- Olive oil
- Salt
- Pepper
- Ricotta cheese
- Butter
- Chili flakes
- Fresh herbs (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and trim the carrots, then toss them with olive oil, salt, and pepper.
- Spread the carrots on a baking sheet in a single layer and roast for about 25-30 minutes or until tender and caramelized.
- In a bowl, mix the ricotta cheese with a pinch of salt and pepper until creamy.
- In a small pan, melt the butter and stir in the chili flakes for a minute.
- Once the carrots are done, remove them from the oven and transfer to a serving platter.
- Top the roasted carrots with the whipped ricotta and drizzle with the chili butter.
- Garnish with fresh herbs if desired and serve warm.
Notes
Don’t overcrowd the baking pan and cut the carrots to a uniform size for even cooking. Watch the butter carefully to avoid burning.
