Description

A delightful dish combining the natural sweetness of roasted carrots with creamy ricotta and a hint of heat from chili butter.


Ingredients

  • Carrots
  • Olive oil
  • Salt
  • Pepper
  • Ricotta cheese
  • Butter
  • Chili flakes
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and trim the carrots, then toss them with olive oil, salt, and pepper.
  3. Spread the carrots on a baking sheet in a single layer and roast for about 25-30 minutes or until tender and caramelized.
  4. In a bowl, mix the ricotta cheese with a pinch of salt and pepper until creamy.
  5. In a small pan, melt the butter and stir in the chili flakes for a minute.
  6. Once the carrots are done, remove them from the oven and transfer to a serving platter.
  7. Top the roasted carrots with the whipped ricotta and drizzle with the chili butter.
  8. Garnish with fresh herbs if desired and serve warm.

Notes

Don’t overcrowd the baking pan and cut the carrots to a uniform size for even cooking. Watch the butter carefully to avoid burning.
