Ingredients

  • 2 medium sweet potatoes
  • 4 cups arugula
  • 1 cup feta cheese, crumbled
  • ½ cup walnuts, chopped
  • 2 tablespoons olive oil (plus more for roasting)
  • 2 tablespoons balsamic vinegar

  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the beets and sweet potatoes, then toss them in olive oil, salt, and pepper.
