- 2 ripe avocados
- 4 cups mixed lettuce (e.g., spinach, arugula, romaine)
- 1 cup couscous
- 2 cups vegetable broth or water
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional toppings: cherry tomatoes, cucumber, feta cheese
Instructions
- Preheat your oven to 400°F (200°C). Cut the avocados in half, remove the pit, and scoop out a small amount of flesh to create a larger cavity. Place them cut-side up on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven for 15-20 minutes until slightly browned.
- Meanwhile, cook the couscous: In a saucepan, bring the vegetable broth or water to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until all the liquid is absorbed, then fluff with a fork.
- In a large bowl, toss the mixed lettuce with lemon juice, and season with salt and pepper.
- To assemble, place a generous amount of the mixed lettuce on a plate, add a serving of couscous, and top with the roasted avocado halves.
- Optionally, add toppings like cherry tomatoes, cucumber, and feta cheese before serving.
