Ingredients

  • 3 pounds boneless skinless chicken thighs (or chicken breasts sliced in half lengthwise)
  • 2 teaspoons olive oil (for cooking)
  • 1 can chipotle peppers in adobo sauce (7 oz)
  • 4 tablespoons fresh lime juice (about 2 limes)
  • 4 tablespoons fresh orange juice (about 1 orange)
  • 1/2 cup fresh cilantro (packed)
  • 6 cloves garlic (peeled)
  • 1 medium onion (quartered)
  • 1 teaspoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground coriander (optional)
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Add all marinade ingredients to a blender or food processor and blend until smooth.
  2. Place chicken in a zip-top bag or airtight container, pour in the marinade, seal, and massage to coat. Marinate for at least 30 minutes or up to 24 hours.
  3. For grilling: Preheat grill to medium-high. Grill chicken for 6-8 minutes per side until cooked through.
  4. For pan-searing: Heat skillet, add oil and chicken with marinade, cook for about 9-10 minutes in total until cooked through.
  5. For air frying: Preheat air fryer, arrange chicken in a single layer, and air fry at 400°F for a total of 14-15 minutes or until cooked through.

Notes

Marinating longer enhances flavor. Check internal temperature of chicken to ensure it reaches 165°F for safety.
