- 4 cups fresh rhubarb, chopped into 1/2-inch pieces
- 1 cup granulated sugar
- 1 tablespoon lemon zest
- 2 cups vodka
- 1 teaspoon vanilla extract (optional)
Instructions
- Wash the rhubarb thoroughly and trim off the leaves. It’s important to remove the leaves as they are toxic. Chop the rhubarb into small pieces.
- Combine the chopped rhubarb, granulated sugar, and lemon zest in a large glass jar or bottle. Stir or shake gently, ensuring everything is well mixed. Let the mixture sit for 24 hours to allow the flavors to meld.
- Pour in the vodka and add vanilla extract if you choose to. Mix well and seal the jar tightly.
Notes
Store for at least a month before use to allow flavors to deepen. Can last up to a year if stored properly.
