Description
A refreshing drink combining tangy rhubarb and sweet watermelon or strawberries, perfect for hot days.
Ingredients

- 1/2 lb rhubarb, chopped
- 1/2 cup diced watermelon or strawberries
- 1 tbsp lime juice
- 2 tbsp sugar or agave
- 2 1/2 cups cold water
Instructions
- Combine the chopped rhubarb, diced watermelon (or strawberries), and sugar in a saucepan. Pour in 1 cup of water.
- Bring the mixture to a simmer over medium heat. Let it cook for about 8–10 minutes until the rhubarb is soft.
- Remove the saucepan from the heat and blend the mixture until smooth using a blender.
- Strain the blended mixture through a fine-mesh sieve into a bowl or pitcher to remove any solids.
- Allow the strained liquid to cool to room temperature. Once cooled, stir in the lime juice and remaining cold water.
- Serve the Rhubarb Cooler over ice and optionally add crushed mint leaves and lime wheels.
Notes
For a sparkling version, replace cold water with sparkling water or club soda. You can also add herbs like basil or mint for extra flavor.
