Description

A refreshing drink combining tangy rhubarb and sweet watermelon or strawberries, perfect for hot days.


Ingredients

Scale
  • 1/2 lb rhubarb, chopped
  • 1/2 cup diced watermelon or strawberries
  • 1 tbsp lime juice
  • 2 tbsp sugar or agave
  • 2 1/2 cups cold water

Instructions

  1. Combine the chopped rhubarb, diced watermelon (or strawberries), and sugar in a saucepan. Pour in 1 cup of water.
  2. Bring the mixture to a simmer over medium heat. Let it cook for about 8–10 minutes until the rhubarb is soft.
  3. Remove the saucepan from the heat and blend the mixture until smooth using a blender.
  4. Strain the blended mixture through a fine-mesh sieve into a bowl or pitcher to remove any solids.
  5. Allow the strained liquid to cool to room temperature. Once cooled, stir in the lime juice and remaining cold water.
  6. Serve the Rhubarb Cooler over ice and optionally add crushed mint leaves and lime wheels.

Notes

For a sparkling version, replace cold water with sparkling water or club soda. You can also add herbs like basil or mint for extra flavor.
