Description

A refreshing drink that combines the tangy flavor of rhubarb with the sweetness of watermelon or strawberries, perfect for hot days.


Ingredients

Scale
  • 1/2 lb rhubarb, chopped
  • 1/2 cup diced watermelon or strawberries
  • 1 tbsp lime juice
  • 2 tbsp sugar or agave
  • 2 1/2 cups cold water

Instructions

  1. Combine the rhubarb, watermelon (or strawberries), and sugar in a saucepan. Pour in 1 cup of water.
  2. Bring the mixture to a simmer over medium heat for about 8-10 minutes until the rhubarb is soft.
  3. Remove the saucepan from the heat and blend the mixture until smooth using a blender.
  4. Strain the blended mixture through a fine-mesh sieve into a bowl or pitcher.
  5. Allow the strained liquid to cool to room temperature, then stir in the lime juice and remaining cold water.
  6. Serve the Rhubarb Cooler over ice, optionally adding crushed mint leaves and lime wheels.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. Stir well before serving again.
