A refreshing salad packed with succulent grilled chicken, creamy avocado, and vibrant greens, dressed with a sweet and tangy honey Dijon dressing.

- 2 boneless, skinless chicken breasts, pounded to an even ½-inch thickness
- Chicken marinade (see below)
- 4 cups chopped romaine lettuce
- 1 avocado, sliced
- â…“ cup shredded cheese
- â…“ cup cherry tomatoes, halved
- Chicken Marinade:
- 6 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- Juice of 2 limes
- 2 teaspoons minced garlic
- ½ teaspoon salt
- ÂĽ teaspoon black pepper
- 2 teaspoons sugar
- 2 teaspoons Dijon mustard
Instructions
- In a medium bowl, whisk together all marinade ingredients until smooth.
- Add chicken breasts and toss to coat thoroughly. Cover tightly and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.
- Preheat a greased grill, grill pan, or stovetop skillet.
- Using tongs, transfer the chicken, discarding excess marinade. Grill chicken for 5–7 minutes per side, or until cooked through and juices run clear when sliced into the thickest part.
- Let rest for a few minutes before slicing thinly or chopping into ½-inch pieces.
- To assemble the salad, layer chopped romaine lettuce as the base.
- Top with grilled chicken, cherry tomatoes, shredded cheese, and sliced avocado.
- Drizzle with honey Dijon dressing and serve immediately.
Notes
For best results, marinate chicken for at least 4 hours. Use fresh ingredients for enhanced flavor.
