Description

A refreshing salad packed with succulent grilled chicken, creamy avocado, and vibrant greens, dressed with a sweet and tangy honey Dijon dressing.


Ingredients

  • 2 boneless, skinless chicken breasts, pounded to an even ½-inch thickness
  • Chicken marinade (see below)
  • 4 cups chopped romaine lettuce
  • 1 avocado, sliced

  • â…“ cup cherry tomatoes, halved
  • Chicken Marinade:
  • 6 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Juice of 2 limes
  • 2 teaspoons minced garlic
  • ½ teaspoon salt
  • ÂĽ teaspoon black pepper
  • 2 teaspoons sugar
  • 2 teaspoons Dijon mustard

Instructions

  1. In a medium bowl, whisk together all marinade ingredients until smooth.
  2. Add chicken breasts and toss to coat thoroughly. Cover tightly and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.
  3. Preheat a greased grill, grill pan, or stovetop skillet.
  4. Using tongs, transfer the chicken, discarding excess marinade. Grill chicken for 5–7 minutes per side, or until cooked through and juices run clear when sliced into the thickest part.
  5. Let rest for a few minutes before slicing thinly or chopping into ½-inch pieces.
  6. To assemble the salad, layer chopped romaine lettuce as the base.
  7. Top with grilled chicken, cherry tomatoes, shredded cheese, and sliced avocado.
  8. Drizzle with honey Dijon dressing and serve immediately.

Notes

For best results, marinate chicken for at least 4 hours. Use fresh ingredients for enhanced flavor.
