- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.
- Mix dry ingredients: In a large bowl, combine the flour, sugar, baking soda, baking powder, salt, and cocoa powder. Mix well.
- Combine wet ingredients: In a separate bowl, mix together the oil, buttermilk, eggs, red food coloring, and vanilla extract until fully blended.
- Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Stir until no flour is visible, being careful not to overmix.
- Prepare the cream cheese filling: In another bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth and creamy.
- Fill the muffin tin: Spoon about a tablespoon of muffin batter into each muffin cup. Add a teaspoon of the cream cheese filling on top of the batter, then cover with another tablespoon of muffin batter.
- Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For variety, consider adding nuts, chocolate chips, or flavored cream cheese.
