Description

Delicious red velvet muffins with a creamy cream cheese filling, perfect for breakfast or dessert.


Ingredients

  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.
  2. Mix dry ingredients: In a large bowl, combine the flour, sugar, baking soda, baking powder, salt, and cocoa powder. Mix well.
  3. Combine wet ingredients: In a separate bowl, mix together the oil, buttermilk, eggs, red food coloring, and vanilla extract until fully blended.
  4. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Stir until no flour is visible, being careful not to overmix.
  5. Prepare the cream cheese filling: In another bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth and creamy.
  6. Fill the muffin tin: Spoon about a tablespoon of muffin batter into each muffin cup. Add a teaspoon of the cream cheese filling on top of the batter, then cover with another tablespoon of muffin batter.
  7. Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
