  • ½ cup unsalted butter, softened
  • 34 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and vinegar. Gradually mix in red gel food coloring.
  5. Mix dry ingredients in three additions, alternating with buttermilk, on low speed. Refrigerate dough for at least 30 minutes.
  6. In another bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in vanilla and salt.
  7. Scoop chilled dough into balls and place on prepared sheets, pressing a thumbprint into each.
  8. Fill indentations with cream cheese filling, then bake for 10–12 minutes until edges are set.
  9. Cool on the baking sheet for 5–7 minutes, then transfer to a wire rack.
  10. Dust with powdered sugar or drizzle with melted white chocolate if desired.

Notes

Avoid overmixing the dough and be sure to chill it to maintain cookie shape. Using gel food coloring is recommended for best results.
