Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup white chocolate chips (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set this mixture aside.
  3. In another bowl, beat together the softened butter and granulated sugar until the mixture is light and fluffy.
  4. Add the large egg, red food coloring, and vanilla extract to the butter mixture. Mix well until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. In a separate bowl, mix the cream cheese and powdered sugar until it’s smooth and creamy.
  7. Using a cookie scoop, take some dough and flatten it. Place about a teaspoon of the cream cheese filling in the center. Fold the dough over and form into a ball, sealing the filling inside.
  8. Place the dough balls on a baking sheet lined with parchment paper, leaving some space between them.
  9. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  10. Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
  11. Once cooled, melt the white chocolate and drizzle it over the cookies before serving.
