Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon red food coloring
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Beat the softened butter, granulated sugar, and brown sugar until creamy and smooth.
  3. Add the eggs, vanilla extract, and red food coloring to the bowl. Mix until well combined.
  4. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture. Mix until just combined; do not overmix.
  6. Spread the cookie dough evenly in the prepared baking pan with a spatula.
  7. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool completely in the pan on a wire rack.
  9. Beat the softened cream cheese and butter together until smooth and fluffy.
  10. Gradually add in the powdered sugar and vanilla extract, mixing until the frosting is well-combined and fluffy.
  11. Spread the cream cheese frosting over the cooled cookie bars, cut into squares, and serve.
