- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring

Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch square baking pan by greasing it or lining it with parchment paper.
- In a medium bowl, whisk together the melted butter and 1 cup of sugar until combined. Add vanilla extract, red food coloring, and apple cider vinegar, and mix well.
- Incorporate the eggs, adding them one at a time and whisking well after each addition.
- In another bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Pour the brownie batter into the prepared baking pan, reserving about 1/4 cup for later use.
- In a separate bowl, beat together the softened cream cheese, 1/3 cup of sugar, 1 egg, and 1/2 teaspoon vanilla extract until creamy and smooth.
- Spoon the cheesecake mixture over the brownie batter, spreading it out evenly. Drop small spoonfuls of the reserved brownie batter on top of the cheesecake layer and swirl together with a toothpick or knife.
- Place the pan in the preheated oven and bake for 30-35 minutes until the edges are firm and the center is set.
- Allow the brownies to cool in the pan for at least 20 minutes before transferring to a wire rack. Let them cool completely before cutting into squares and serving.

Cool completely before storage. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
