Description

Delicious soft-boiled eggs marinated in a savory mixture that enhance your ramen dishes.

Ingredients

Scale
  • 4 large eggs
  • 1 cup soy sauce
  • 1/2 cup mirin
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil

Instructions

  1. In a small saucepan, combine soy sauce, mirin, water, sugar, and sesame oil. Heat on medium until the sugar dissolves.
  2. Bring a pot of water to a boil. Carefully add the eggs one at a time and boil for 6-7 minutes.
  3. Remove the eggs and place them in an ice bath to cool.
  4. Once cooled, gently peel the eggs and place them in the marinade.
  5. Let the eggs marinate in the refrigerator for at least 4 hours, preferably overnight.
  6. Slice the eggs in half and serve on top of your ramen.

Notes

For the best flavor, aim for at least 8-12 hours of marination. Avoid overcooking the eggs to maintain a runny yolk.
