A simple and flavorful dish featuring tilapia fillets cooked in a sweet and smoky roasted pepper sauce.

- 4 tilapia fillets
- 2 red bell peppers
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley for garnishing
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the red bell peppers into halves and remove the seeds. Place them cut-side down on a baking sheet.
- Drizzle with one tablespoon of olive oil, and roast in the oven for about 20 minutes or until the skin is charred.
- While the peppers are roasting, season the tilapia fillets with salt, pepper, and paprika.
- In a pan, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and cook until fragrant.
- Once the peppers are done, remove them from the oven and place them in a food processor. Blend until smooth.
- Pour the roasted pepper sauce back into the pan and bring it to a simmer. Add the seasoned tilapia fillets, and cook for about 4-5 minutes on each side.
- Once the tilapia is cooked through, serve it hot, garnished with fresh parsley.
Notes
Avoid overcooking the tilapia to prevent it from becoming dry. You can use frozen tilapia, just ensure it’s thawed. Feel free to add red pepper flakes for a spicy kick.
