Ingredients

  • 1.5 cups long grain cooking rice, uncooked
  • 2.5 cups chicken broth (or vegetable broth for a vegetarian option)
  • 1 can (10-oz) Rotel diced tomatoes and green chilies
  • 1 tsp chili powder
  • 0.5 tsp paprika

Instructions

  1. In a large skillet over medium heat, melt the butter.
  2. Add the uncooked rice to the skillet and stir for 2-3 minutes until it turns light golden.
  3. Pour in the chicken broth and add the Rotel diced tomatoes and green chilies. Mix well.
  4. Sprinkle in the chili powder and paprika, stirring to combine.
  5. Bring to a boil, then reduce heat to low, cover, and let simmer for 18-20 minutes.
  6. Remove from heat and let sit covered for 5 minutes before fluffing with a fork and serving.
