- 2 Tbsp butter
- 1.5 cups long grain cooking rice, uncooked
- 2.5 cups chicken broth (or vegetable broth for a vegetarian option)
- 1 can (10-oz) Rotel diced tomatoes and green chilies
- 1 tsp chili powder
- 0.5 tsp paprika
Instructions
- In a large skillet over medium heat, melt the butter.
- Add the uncooked rice to the skillet and stir for 2-3 minutes until it turns light golden.
- Pour in the chicken broth and add the Rotel diced tomatoes and green chilies. Mix well.
- Sprinkle in the chili powder and paprika, stirring to combine.
- Bring to a boil, then reduce heat to low, cover, and let simmer for 18-20 minutes.
- Remove from heat and let sit covered for 5 minutes before fluffing with a fork and serving.
Notes
For a vegetarian option, use vegetable broth. Customize by adding vegetables or spices as desired.
