Description

A delicious fusion of two favorites, these quiche stuffed bagels are perfect for breakfast, brunch, or a quick dinner.


Ingredients

  • 4 bagels
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked vegetables (spinach, bell peppers, mushrooms)
  • Salt and pepper to taste
  • Optional: chopped cooked bacon or ham

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the bagels in half and hollow out the insides slightly.
  3. Whisk together the eggs, milk, salt, and pepper in a bowl.
  4. Stir in the cheese and cooked vegetables (and bacon/ham if using).
  5. Place the bagel halves on a baking sheet and pour the egg mixture into each half until filled.
  6. Bake for 15-20 minutes or until the egg is set and the bagels are golden.
  7. Allow to cool slightly before serving.

Notes

Don’t overfill the bagels and ensure vegetables are cooked beforehand to avoid sogginess.
