- 8 oz cream cheese, softened
- 1 cup pumpkin puree (not pumpkin pie filling)
- 2 cups powdered sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- Sprinkles or crushed nuts for decoration (optional)
Instructions
- Mix the softened cream cheese, pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract in a large bowl. Blend until smooth and creamy.
- Chill the mixture by covering the bowl with plastic wrap and refrigerating for about 120 minutes.
- Shape the chilled mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Melt the white chocolate chips in a microwave-safe bowl in 30-second increments, stirring in between until smooth.
- Coat each truffle with the melted white chocolate and return to the parchment-lined baking sheet.
- Decorate with crushed nuts or colorful sprinkles before the chocolate sets.
- Set the truffles at room temperature or refrigerate to fully set before serving.
