- 1 cup graham cracker crumbs
- 1 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 10 oz white chocolate chips
- 2 tablespoons coconut oil
Instructions
- Mix the pumpkin puree, graham cracker crumbs, powdered sugar, pumpkin pie spice, and vanilla extract until combined.
- Chill the mixture in the refrigerator for at least one hour, or until firm enough to shape.
- Scoop out small amounts of the mixture and roll them into balls, placing them on a parchment-lined baking sheet.
- Melt the white chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip each pumpkin ball into the melted white chocolate, coating it evenly, and return it to the parchment paper.
- Let the truffles set in the fridge for about 30 minutes, until the white chocolate is hardened.
Notes
Ensure to chill the mixture well before rolling to make shaping the truffles easier. Use good quality chocolate for the best taste.
