Description

Pumpkin Spice Latte Cookies are soft, chewy cookies with pumpkin puree, espresso, and warm spices, inspired by the popular fall drink.


Ingredients

Scale

2 cups all-purpose flour

1 cup pumpkin puree

1/2 cup butter, softened

1 cup brown sugar

1 egg

2 tbsp instant espresso powder

1 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ginger

1/2 tsp salt

1 tsp vanilla extract

1/2 cup white chocolate chips (optional)


Instructions

1. Preheat oven to 350°F; line baking sheets.

2. Cream butter and sugar; add egg, pumpkin, and vanilla.

3. Mix in espresso powder.

4. Whisk flour, baking soda, salt, and spices separately.

5. Combine wet and dry ingredients.

6. Fold in chocolate chips if using.

7. Drop by tablespoon onto sheets.

8. Bake 12–14 minutes.

9. Cool before serving.

Notes

Chill dough for puffier cookies.

Add glaze made with espresso and powdered sugar.

Store airtight 5 days or freeze 2 months.
