Pumpkin Spice Crumble Cake is a moist pumpkin cake with warm spices and a buttery streusel topping, perfect for fall baking.
Ingredients
2 cups all-purpose flour
1 cup pumpkin puree
3/4 cup brown sugar
1/2 cup white sugar
1/2 cup vegetable oil
2 large eggs
1 tsp baking soda
1 tsp baking powder
2 tsp pumpkin pie spice
1 tsp cinnamon
1/2 tsp salt
1/2 cup milk
Crumble topping:
1 cup flour
1/2 cup brown sugar
1/2 cup butter, cubed
1 tsp cinnamon
Instructions
1. Preheat oven to 350°F; grease 9×13 dish.
2. Whisk flour, baking soda, baking powder, spices, and salt.
3. Mix pumpkin puree, sugars, oil, eggs, and milk.
4. Combine wet and dry; pour batter into dish.
5. Mix crumble topping and sprinkle over batter.
6. Bake 35–40 minutes until toothpick comes out clean.
7. Cool before slicing.
Notes
Add pecans to crumble for crunch.
Top with cream cheese glaze for extra sweetness.
Freeze slices individually for up to 2 months.
