Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients: In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. Cream the butter and sugars until light and fluffy.
  4. Add the egg, vanilla extract, and pumpkin puree to the creamed mixture.
  5. Combine the dry and wet ingredients by gradually adding the dry mixture to the wet.
  6. Shape the cookies by dropping spoonfuls of dough onto baking sheets.
  7. Bake for 10-12 minutes until the edges are golden.
  8. Cool on the baking sheets for a few minutes before transferring to a wire rack.
