Description

Soft and chewy cookies that combine the flavors of pumpkin pie in a convenient treat.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Gradually add the flour, salt, cinnamon, nutmeg, and baking powder. Mix until combined.
  4. Fold in the pumpkin puree and vanilla extract until the dough comes together.
  5. Scoop tablespoons of dough and shape into small discs.
  6. Place them on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow to cool for a few minutes before transferring to wire racks. Enjoy warm or store for later!

Notes

Use softened butter for easy creaming, and avoid overmixing to keep cookies tender.
