Description

Ingredients

  • 1 cup whole-wheat flour
  • 1/2 cup honey
  • 1 cup canned pumpkin puree
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix together whole-wheat flour, baking soda, salt, and spices.
  3. In another bowl, whisk together honey, pumpkin puree, oil, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just moistened.
  5. If using, fold in the nuts.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
