Description
Pulehu Chicken is a Hawaiian-style grilled favorite made with a soy-citrus-garlic marinade and cooked directly over flame for juicy, smoky perfection.
Ingredients
2 lbs chicken thighs (boneless or bone-in)
1/2 cup soy sauce (shoyu style preferred)
1 tbsp brown sugar
1 tbsp minced garlic
1 tsp grated ginger
2 tbsp lemon or calamansi juice
Sliced green onions or sesame seeds (optional, for garnish)
Chili flakes (optional for heat)
Instructions
1. In a large bowl, mix soy sauce, sugar, garlic, ginger, and citrus juice.
2. Add chicken and coat well. Marinate in the fridge for at least 4 hours, or overnight.
3. Preheat grill to medium-high heat.
4. Grill chicken for 6–8 minutes per side until charred and fully cooked.
5. Let rest 5 minutes before slicing. Garnish as desired.
6. Serve hot with rice, grilled fruit, or slaw.
Notes
Swap soy sauce for low-sodium if needed.
Use skinless chicken for a lighter version.
