Description

A nutritious and satisfying bowl filled with quinoa, black beans, and fresh vegetables, perfect for a healthy dinner.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable or chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  2. While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the diced bell pepper and cook for about 3–4 minutes until slightly softened.
  3. Add corn, black beans, and cumin powder to the skillet. Stir everything together and cook for another 5–7 minutes until heated through. Add salt and pepper to taste.
  4. Once the quinoa is ready, fluff it with a fork and portion it into serving bowls.
  5. Top the quinoa with the bean and corn mixture, halved cherry tomatoes, diced avocado, and garnish with fresh cilantro.
  6. Serve with lime wedges on the side. Squeeze fresh lime juice over the bowl before enjoying.

Notes

This dish can be customized with additional proteins like grilled chicken or tofu. For maximum freshness, add avocado just before serving.
