Description

Delicious and nutritious egg bites made with cottage cheese and packed with protein, perfect for breakfast or a snack.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup cooked turkey bacon or chicken sausage
  • ½ cup shredded cheese
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup finely chopped vegetables

Instructions

  1. Preheat your oven to 350°F (175°C) and coat a 12-cup muffin tin with cooking spray or line it with silicone muffin liners.
  2. Combine 6 large eggs, 1 cup cottage cheese, ¼ cup milk, ½ teaspoon salt, ¼ teaspoon black pepper, ¼ teaspoon garlic powder, and ¼ teaspoon onion powder in a blender. Blend the mixture until it becomes smooth and silky.
  3. Transfer the blended mixture to a mixing bowl. Fold in ½ cup shredded cheese, ½ cup finely chopped vegetables, and ½ cup of cooked meat (if you’re using it).
  4. Ladle the egg mixture into each muffin cup, filling them about ¾ full to avoid overflow during baking.
  5. Place the muffin tin in the preheated oven and bake for 20-25 minutes. The egg bites should puff up, and the centers need to look set.
  6. Remove the muffin tin from the oven and let the egg bites cool for about 3-5 minutes. Use a small offset spatula to gently pop them out of the tin.
  7. Serve the egg bites warm or store them in an airtight container in the refrigerator for up to 4 days.

Notes

Customize the egg bites with your favorite vegetables and meats. These can also be made vegetarian by omitting the meat.
