- 3 ripe bananas
- 1 cup cottage cheese
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- Optional: nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the bananas, then add cottage cheese, sugar, eggs, and vanilla. Mix until smooth.
- In a separate bowl, combine baking soda, baking powder, salt, and flour.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- If desired, fold in nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
Notes
Use ripe bananas for the best flavor. Don’t overmix the batter to prevent dense bread.
