Ingredients

  • 1 cup cottage cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • Optional: nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas, then add cottage cheese, sugar, eggs, and vanilla. Mix until smooth.
  3. In a separate bowl, combine baking soda, baking powder, salt, and flour.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  5. If desired, fold in nuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before slicing and serving.
