Description
Hearty pumpkin chili with beans, beef, and warm spices. A festive fall dish perfect for cozy nights and Halloween gatherings.
Ingredients
1 tbsp olive oil
1 onion, diced
2 garlic cloves
1 lb ground beef
1 red bell pepper
1 can pumpkin puree
1 can diced tomatoes
1 can kidney beans
1 can black beans
2 cups broth
2 tbsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
1/2 tsp cinnamon
Salt, pepper
Instructions
1. Heat oil, cook onion + garlic.
2. Add beef, cook until browned.
3. Add bell pepper, pumpkin, tomatoes, beans, broth.
4. Stir in spices.
5. Simmer 30–40 minutes.
6. Adjust seasoning.
Notes
Pumpkin adds creaminess + fiber.
Freezes well up to 3 months.
Top with sour cream or cheese for serving.
