Description

A warm and comforting creamy potato soup that’s easy to make and perfect for any occasion.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or heavy cream
  • 3 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: cheese, chives, bacon bits

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the potatoes are tender.
  3. Using a potato masher or immersion blender, mash or blend the soup to your desired consistency.
  4. Stir in the milk or heavy cream, and season with salt and pepper.
  5. Serve hot, garnished with your choice of toppings.

Notes
