Ingredients

- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup milk or heavy cream
- 3 tablespoons butter
- Salt and pepper to taste
- Optional toppings: cheese, chives, bacon bits
Instructions
- In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the potatoes are tender.
- Using a potato masher or immersion blender, mash or blend the soup to your desired consistency.
- Stir in the milk or heavy cream, and season with salt and pepper.
- Serve hot, garnished with your choice of toppings.
Notes
For variations, consider adding vegetables, cheese, or spices to enhance flavor. Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
