Description

A simple, comforting casserole that combines ground beef, pasta, and mixed vegetables into a delicious and filling meal perfect for busy families.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 medium onion
  • 2 cups (300 g) mixed frozen vegetables
  • 1 can (10.5 oz or 300 g) cream of mushroom soup
  • 1 cup (240 ml) milk
  • 2 cups (200 g) shredded cheddar cheese
  • 3 cups (360 g) cooked pasta
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat.
  2. Add oil and finely chopped onion; cook until translucent, about 5 minutes.
  3. Add ground beef and break it apart; cook until browned, about 7-10 minutes.
  4. Season beef with salt and pepper while cooking.
  5. Stir in mixed frozen vegetables and heat through for about 5 minutes.
  6. Pour in cream of mushroom soup and milk; stir to combine.
  7. Allow the mixture to simmer for a few minutes until thickened.
  8. In a large bowl, combine cooked pasta with the beef and vegetable mixture.
  9. Gently fold everything together until pasta is coated in sauce.
  10. Preheat oven to 350°F (175°C).
  11. Transfer pasta mixture to a greased 9×13 inch baking dish.
  12. Sprinkle shredded cheddar cheese on top and cover with foil.
  13. Bake for 25 minutes, then remove foil and bake for an additional 15-20 minutes.
  14. Let the casserole rest for 10 minutes before serving.

Notes

This casserole is customizable with different proteins and vegetables. Store leftovers in an airtight container in the fridge for up to 3-4 days.
