Ingredients

  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 cup white chocolate chunks
  • 1 cup pistachio cream (or crushed pistachios)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar in a large bowl until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually mix the dry mixture into the creamed butter and sugars.
  6. Fold in the white chocolate chunks and pistachio cream until evenly distributed.
  7. Drop spoonfuls of dough onto ungreased cookie sheets.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
