Description

Delightful sugar cookie sandwiches filled with creamy pistachio filling, perfect for any occasion.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pistachio cream (or pistachio paste)
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt. Set this mixture aside for later.
  3. In a separate large bowl, cream the softened butter, granulated sugar, and powdered sugar until it is light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually incorporate the dry flour mixture into the wet mixture until everything is combined.
  6. Scoop balls of dough onto a lined baking sheet, flattening each ball slightly.
  7. Bake for 10-12 minutes, or until the edges are just golden.
  8. Once baked, cool the cookies completely on a wire rack.
  9. While the cookies are cooling, whip together the pistachio cream and heavy cream in a bowl until smooth.
  10. Once the cookies are cool, spread or pipe the pistachio filling onto the bottom of one cookie and top with another cookie to create a sandwich.
