Ingredients

- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pistachio cream (or pistachio paste)
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, and salt. Set this mixture aside for later.
- In a separate large bowl, cream the softened butter, granulated sugar, and powdered sugar until it is light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually incorporate the dry flour mixture into the wet mixture until everything is combined.
- Scoop balls of dough onto a lined baking sheet, flattening each ball slightly.
- Bake for 10-12 minutes, or until the edges are just golden.
- Once baked, cool the cookies completely on a wire rack.
- While the cookies are cooling, whip together the pistachio cream and heavy cream in a bowl until smooth.
- Once the cookies are cool, spread or pipe the pistachio filling onto the bottom of one cookie and top with another cookie to create a sandwich.
