Ingredients

  • 1 tablespoon unsalted butter, softened (for filling)
  • 12 tablespoons heavy cream (to adjust filling consistency)

Instructions

  1. Cream together 1 cup softened unsalted butter, ½ cup granulated sugar, and 1 cup brown sugar until light and fluffy. Beat in 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
  2. In a separate bowl, whisk together 2 ½ cups flour, ½ cup cocoa powder, 1 teaspoon baking soda, and ½ teaspoon salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Fold in 1 ½ cups dark chocolate chunks and ½ cup chopped pistachios (if using).
  4. For the filling, combine 1 cup shelled pistachios, 1 tablespoon powdered sugar, and 1 tablespoon softened unsalted butter. Process or finely chop until a coarse paste forms. Stir in 1-2 tablespoons heavy cream until a smooth consistency is achieved.
  5. Cover and chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop rounded tablespoons of dough, flatten slightly, place about ½ to 1 teaspoon of filling in the center, enclose the filling, and roll into smooth balls.
  8. Place 2 inches apart on baking sheets and bake for 10-12 minutes until edges are set and centers are still soft.
  9. Let cool for 5-10 minutes on baking sheets before transferring to a wire rack.
